Spicy Lamb Tacos

Ingredients:

• 2 lb bone in lamb tenderloins
• 1 tbsp cumin
• 1 tbsp chili powder
• 1 tbsp dried oregano
• 1 tbsp garlic powder
• 1 tbsp salt
• 1 tbsp black pepper
• 1 tbsp olive oil
• 1 tbsp avocado oil
• 1 avocado
• 1 cup cherry tomatoes, cut in half
• 1/3 cup red onions, diced
• 2 limes
• tortillas

DIRECTIONS:

In a small bowl, add the lamb and all the seasonings plus olive oil. Toss well so the lamb is evenly coated. Cover with plastic wrap and let marinate for at least 2 hours and up to 8 hours.

Put a frying pan or cast iron pan on high heat with the avocado oil. Once oil is hot, place the lamb tenderloins on the pan and cook for 4 minutes on each side. There should be a nice dark crust on the outside. Place on a cutting board and allow to rest for five minutes.

Meanwhile, make your guacamole. Smash an avocado and sprinkle in salt and lime juice (use about two tsp of salt and juice one lime for one large avocado). Slice your lamb being careful to cut around the bone. Bone in meat tastes so incredible and this recipe is worth the extra work!

Assemble your taco: get your tortilla (toast it directly on the stove top so it gets a little charred) and place the sliced lamb on the bottom. Add the onions, tomatoes and guac. Squeeze a little more lime on top and enjoy!! Don't be afraid to add different sauces and spices to your taco!
